Croan's Kippers

History

Croan & Sons had a large low kipper factory, close to Newhaven Fishmarket,  where they smoked kippers in ovens, using a fire of oak sawdust.

The factory moved in the mid-1990s, further west along the coast to West Shore Road, Granton.

The picture at the top of this page shows the oak sawdust used to smoke the kippers.
