Croan's Kippers
History
Croan & Sons had a large low kipper factory, close to Newhaven Fishmarket, where they smoked kippers in ovens, using a fire of oak sawdust.
The factory moved in the mid-1990s, further west along the coast to West Shore Road, Granton.
Kippers
Some kippers were hung on hooks on trolleys before being smoked in the ovens. as can be seen from the main photograph at the top of this page.
Others were laid on racks as can be seen here.
